Ingredients

Ground Beef
  • 1 pound 80/20 ground beef
Wraps & Cheese
  • 6-8 large flour tortillas
  • 6-8 slices American cheese
Fresh Toppings
  • 2 cups shredded iceberg or romaine lettuce
  • ½ cup dill pickle chips finely chopped
  • 1 tablespoon sesame seeds optional
Special Sauce
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika optional

Equipment

  • Small Bowl
  • Whisk
  • Large Skillet

Method

Prepare the Special Sauce
  1. In a small bowl, whisk together all special sauce ingredients until well combined. Taste and adjust seasonings as desired, then set aside.
Cook the Ground Beef
  1. Heat a large skillet over medium-high heat, then add ground beef and cook until fully browned; drain excess grease. Season the beef with salt, pepper, onion powder, and garlic powder for extra flavor.
Assemble the Wraps
  1. Lay a tortilla flat and spread a generous amount of special sauce down the center. Top the sauce with seasoned ground beef, then immediately place a slice of American cheese over the hot beef to melt slightly.
Finishing Touches and Folding
  1. Sprinkle shredded lettuce, chopped dill pickles, and optional sesame seeds over the cheese. Fold in the sides of the tortilla and tightly roll it up from the bottom; repeat for remaining wraps.
  2. Optionally, lightly toast the finished wraps in a dry skillet over medium heat for 1-2 minutes per side until lightly golden brown.

Notes

For a lighter option, consider using lean ground beef or turkey. You can also customize your toppings with tomatoes, onions, or jalapeños for an extra kick.
