Ingredients
  

Meatloaf
  • 1.5 lbs Ground Beef 80/20 lean-to-fat ratio
  • 1 Onion finely diced
  • 3 cloves Garlic minced
  • 1 cup Breadcrumbs Panko or regular
  • 2 Eggs
  • 0.5 cup Milk whole milk or buttermilk
  • 0.25 cup Ketchup for mixture
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dijon Mustard
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 0.5 tsp Dried Thyme or Oregano Optional
Glaze
  • 0.25 cup Ketchup
  • 1 tbsp Brown Sugar optional
  • 1 tsp Apple Cider Vinegar or Worcestershire Sauce

Method
 

Preparation
  1. Sauté the finely diced onion in olive oil over medium heat until translucent, then add minced garlic and cook for one minute until fragrant. Let the mixture cool slightly.
  2. In a large bowl, whisk together eggs, milk, Worcestershire sauce, 1/4 cup ketchup, mustard, salt, pepper, and optional dried herbs.
  3. Stir in the breadcrumbs and the cooled sautéed onion and garlic to the wet mixture.
  4. Add the ground beef to the bowl and gently mix all ingredients with your hands until just combined, being careful not to overmix.
  5. Lightly grease a loaf pan or line a baking sheet with parchment paper, then transfer the meat mixture and shape it into an even loaf.
  6. In a small bowl, whisk together 1/4 cup ketchup, optional brown sugar, and apple cider vinegar or Worcestershire sauce to make the glaze. Spread about half of the glaze over the top of the meatloaf.
Baking
  1. Preheat your oven to 350°F (175°C) and bake the meatloaf for 45-60 minutes.
  2. After the initial baking, remove the meatloaf, brush with the remaining glaze, and continue baking for 15-25 minutes until the internal temperature reaches 160°F (71°C).
  3. Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing to ensure a moist and tender result.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the meatloaf mixture. Serve with mashed potatoes and green beans for a complete meal.
