Preparation
- Sauté the finely diced onion in olive oil over medium heat until translucent, then add minced garlic and cook for one minute until fragrant. Let the mixture cool slightly.
- In a large bowl, whisk together eggs, milk, Worcestershire sauce, 1/4 cup ketchup, mustard, salt, pepper, and optional dried herbs.
- Stir in the breadcrumbs and the cooled sautéed onion and garlic to the wet mixture.
- Add the ground beef to the bowl and gently mix all ingredients with your hands until just combined, being careful not to overmix.
- Lightly grease a loaf pan or line a baking sheet with parchment paper, then transfer the meat mixture and shape it into an even loaf.
- In a small bowl, whisk together 1/4 cup ketchup, optional brown sugar, and apple cider vinegar or Worcestershire sauce to make the glaze. Spread about half of the glaze over the top of the meatloaf.
Baking
- Preheat your oven to 350°F (175°C) and bake the meatloaf for 45-60 minutes.
- After the initial baking, remove the meatloaf, brush with the remaining glaze, and continue baking for 15-25 minutes until the internal temperature reaches 160°F (71°C).
- Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing to ensure a moist and tender result.
Notes
For extra flavor, try adding a pinch of red pepper flakes to the meatloaf mixture. Serve with mashed potatoes and green beans for a complete meal.
