Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts or thighs cut into 1-inch cubes
Marinade & Skewers
  • wooden or metal skewers soak wooden skewers for 30 minutes
  • your chosen marinade ingredients not specified in provided ingredients
Bang Bang Sauce
  • ½ cup mayonnaise full-fat
  • ¼ cup sweet chili sauce
  • 1-2 tablespoons Sriracha
  • 1 tablespoon honey or maple syrup
Garnish (optional)
  • chopped fresh cilantro or scallions
  • toasted sesame seeds
  • lime wedges

Method
 

Preparation
  1. Cut the chicken into 1-inch cubes.
  2. Combine marinade ingredients with the chicken in a bowl, ensuring thorough coating. Marinate in the refrigerator for 30 minutes to 4 hours.
  3. Soak wooden skewers in water while the chicken marinates to prevent burning.
Cooking Skewers
  1. Thread chicken cubes onto skewers, leaving small spaces for even cooking.
  2. Grill on medium-high heat for 3-5 minutes per side until cooked through (165°F/74°C internal temperature).
  3. Alternatively, broil 6-8 inches from heat for 4-6 minutes per side, watching closely to prevent burning.
  4. Or, cook in a large skillet with oil over medium-high heat, in batches, for 3-4 minutes per side until golden brown and cooked through.
Sauce & Serving
  1. While chicken cooks, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey/maple syrup for the Bang Bang sauce.
  2. Remove chicken from heat and drizzle generously with Bang Bang sauce, or serve the sauce on the side. Garnish with cilantro, scallions, sesame seeds, and lime wedges.

Notes

For extra flavor, marinate the chicken for the full 4 hours. Adjust Sriracha to your preferred spice level. Serve with rice or a fresh salad for a complete meal.
