  • 1/2 cup Brown Sugar (light or dark)
  • 3-4 Ripe Bananas (firm but ripe)
  • 1/4 cup Dark Rum
  • 2 tablespoons Banana Liqueur (Crème de Banane) (optional, can substitute with more rum or vanilla extract)
  • 1/2 teaspoon Cinnamon
  • Vanilla Ice Cream for serving

  1. In a sturdy skillet over medium heat, melt the butter, then stir in the brown sugar and cinnamon. Cook until the sugar dissolves and the mixture is syrupy, about 2-3 minutes.
  2. Add banana halves to the skillet and cook for 1-2 minutes per side, basting with the caramel sauce until softened and coated.
  3. Remove the skillet from heat, then carefully pour in the banana liqueur and dark rum.
  4. Return the skillet to medium heat, carefully tilt the pan, and ignite the liquid with a long-handled lighter; allow the flames to burn out naturally, about 30 seconds to a minute.
  5. Once flames subside, gently stir the bananas in the sauce, then scoop vanilla ice cream into bowls and spoon the warm Bananas Foster over the top. Serve immediately.

Notes

For an extra touch of richness, use a good quality dark rum. Be very careful with the flambé step; ensure no flammable items are nearby and have a lid handy to smother flames if needed.
