  • 1 tbsp olive oil
  • 1 lb lean ground turkey (93/7)
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup zucchini diced
  • 14.5 oz diced tomatoes undrained
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp black pepper
  • salt to taste
  • 1 cup cooked brown rice for serving
  • fresh parsley chopped (for garnish, optional)

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet; add ground turkey and cook until no longer pink, then drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and cook until fragrant and softened.
  3. Stir in chopped red bell pepper and diced zucchini, cooking until they begin to tenderize.
  4. Pour in diced tomatoes and chicken broth, then stir in oregano, basil, and black pepper.
  5. Simmer the mixture on low heat for 10-15 minutes, covered, to meld flavors and finish cooking vegetables.
  6. Season with salt to taste.
  7. Serve hot over brown rice and garnish with fresh parsley if desired.

Notes

This recipe is easily adaptable. Feel free to add other vegetables like spinach or mushrooms. For a spicier kick, add a pinch of red pepper flakes with the other seasonings.
