  • 2 medium Yellow or green summer squash (≈ 12 oz)
  • 3 Tbsp Olive oil (extra-virgin)
  • 4 cloves Fresh garlic, minced
  • ½ cup Freshly grated Parmesan cheese (≈ 50 g)
  • 1 tsp Lemon zest
  • 1 Tbsp Fresh lemon juice
  • ½ tsp Salt (Sea salt preferred)
  • ¼ tsp Black pepper, freshly cracked
  • ¼ tsp Red-pepper flakes (optional)
  • 2 Tbsp Fresh parsley, chopped
  • 1 Tbsp toasted pine nuts Optional

Preparation
