Preparation
- Preheat your oven to 400°F (200°C).
- In a large, oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Brown the sausage on all sides until caramelized, then remove and set aside, leaving drippings.
- Add the remaining olive oil to the skillet, then sauté the sliced red onion for 5-7 minutes until soft. Stir in minced garlic and chopped rosemary, cooking for another minute until fragrant.
- Stir in the apple slices and chicken broth, scraping to deglaze the pan.
- Return the browned sausage to the skillet, nestling it with the apples and onions, then season with salt and pepper.
- Transfer the skillet to the preheated oven and roast for 20-30 minutes, until apples are tender and sausage is cooked.
- Serve immediately, optionally garnished with extra fresh rosemary.
Notes
For an extra touch of flavor, try using a mix of sweet and spicy Italian sausage. Adjust salt and pepper to taste based on the seasoning of your sausage.
