  • 3 Honeycrisp apples cored and sliced into 1/2-inch wedges
  • 1 red onion sliced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary chopped
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large, oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Brown the sausage on all sides until caramelized, then remove and set aside, leaving drippings.
  3. Add the remaining olive oil to the skillet, then sauté the sliced red onion for 5-7 minutes until soft. Stir in minced garlic and chopped rosemary, cooking for another minute until fragrant.
  4. Stir in the apple slices and chicken broth, scraping to deglaze the pan.
  5. Return the browned sausage to the skillet, nestling it with the apples and onions, then season with salt and pepper.
  6. Transfer the skillet to the preheated oven and roast for 20-30 minutes, until apples are tender and sausage is cooked.
  7. Serve immediately, optionally garnished with extra fresh rosemary.

Notes

For an extra touch of flavor, try using a mix of sweet and spicy Italian sausage. Adjust salt and pepper to taste based on the seasoning of your sausage.
