Preparation
- Lightly grease a 9x13 inch baking dish.
- Melt butter in a skillet, cook chopped vegetables until soft, and cook any breakfast meat in the same pan.
- Scatter the cubed bread evenly across the bottom of the prepared baking dish.
- Layer the cooked breakfast meat and sautéed vegetables over the bread, adding spinach if desired.
- In a large bowl, whisk together eggs, milk, and seasonings until well combined.
- Pour the egg mixture over the bread and toppings, pressing the bread gently to ensure it soaks up the liquid.
- Sprinkle 1 cup of shredded cheese over the top.
- Cover and refrigerate for at least 4 hours or overnight for best results, or let sit for 30 minutes if baking immediately.
Baking
- Preheat oven to 350°F (175°C), then uncover the casserole and sprinkle with the remaining ½ cup of cheese.
- Bake for 45-60 minutes, or until the casserole is set in the center and golden brown.
- Let the casserole rest for 5-10 minutes before slicing and serving.
Notes
