  • 6-8 slices day-old bread, cubed (sourdough, brioche, or stale regular bread)
  • 8-10 large eggs
  • 1 ½ – 2 cups whole milk or half-and-half
  • 1 ½ - 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 lb cooked sausage, bacon, or diced ham
  • 1 cup chopped bell peppers, onions, spinach, or mushrooms
  • 1 tablespoon butter
  • Salt, black pepper, a pinch of garlic powder, and paprika to taste

Method
 

Preparation
  1. Lightly grease a 9x13 inch baking dish.
  2. Melt butter in a skillet, cook chopped vegetables until soft, and cook any breakfast meat in the same pan.
  3. Scatter the cubed bread evenly across the bottom of the prepared baking dish.
  4. Layer the cooked breakfast meat and sautéed vegetables over the bread, adding spinach if desired.
  5. In a large bowl, whisk together eggs, milk, and seasonings until well combined.
  6. Pour the egg mixture over the bread and toppings, pressing the bread gently to ensure it soaks up the liquid.
  7. Sprinkle 1 cup of shredded cheese over the top.
  8. Cover and refrigerate for at least 4 hours or overnight for best results, or let sit for 30 minutes if baking immediately.
Baking
  1. Preheat oven to 350°F (175°C), then uncover the casserole and sprinkle with the remaining ½ cup of cheese.
  2. Bake for 45-60 minutes, or until the casserole is set in the center and golden brown.
  3. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For an extra flavorful casserole, use a variety of cheeses. Adjust seasonings to your preference and consider adding hot sauce for a kick. This dish is excellent for meal prepping as it reheats well.
