  • 1 cup mixed vegetables frozen peas and carrots, corn, or diced bell peppers
  • 1 can condensed cream of mushroom soup 10.75 ounce
  • 1/2 cup water or beef broth
  • 1 teaspoon dried Italian seasoning
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat, then add ground beef and cook until browned, breaking it up with a spoon.
  2. Drain excess fat, then add diced onion to the skillet and cook for 3-5 minutes until softened.
  3. Stir in minced garlic and cook for one minute until fragrant.
  4. Add mixed vegetables and Italian seasoning; cook, stirring occasionally, for 2-3 minutes to begin softening the vegetables.
  5. Pour in condensed cream of mushroom soup and water or beef broth, stirring until well combined and soup is incorporated.
  6. Bring to a gentle simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes until vegetables are tender and sauce thickens.
  7. Taste and adjust salt and pepper as needed.
  8. Serve hot, optionally garnished with fresh parsley or grated Parmesan cheese.
