Cooking Steps
  1. In a medium bowl, whisk together the eggs, milk or cream, salt, pepper, and optional garlic powder or chives until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat, then sauté chopped mushrooms for 3-5 minutes until softened and lightly browned.
  3. Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted.
  4. Pour the whisked egg mixture over the vegetables in the skillet.
  5. As the eggs begin to set, gently push the cooked portions from the edges towards the center.
  6. Continue cooking and gently stirring for 3-5 minutes until the eggs are mostly set but still slightly moist.
  7. Sprinkle cheddar cheese over the eggs, remove from heat, and let sit for 1 minute to melt.
  8. Serve immediately with toasted whole-wheat bread.
