  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast or thighs cut into 1/2-inch cubes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 4-5 garlic cloves, minced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 8 large flour tortillas burrito size
  • 2 tablespoons fresh parsley or cilantro Optional: chopped for garnish

Method
 

Instructions
  1. Toss the cubed chicken with olive oil, garlic powder, onion powder, black pepper, and salt in a medium bowl, ensuring it's evenly coated.
  2. Heat a large skillet over medium-high heat, add the seasoned chicken, and cook for 5-7 minutes until golden brown and cooked through.
  3. Reduce heat to medium, add minced fresh garlic to the skillet, and sauté for 1-2 minutes until fragrant but not browned.
  4. Turn off the heat, sprinkle both cheeses over the hot chicken and garlic, and stir gently until mostly melted and gooey; cover briefly if needed to fully melt.
  5. Warm tortillas in a dry skillet for 15-20 seconds per side, or microwave wrapped in a damp paper towel for 30-60 seconds until pliable.
  6. Lay out a warm tortilla and spoon a generous amount of the cheesy chicken and garlic filling into its center.
  7. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a secure wrap; repeat for remaining tortillas and garnish with parsley or cilantro if desired, then serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes with the garlic powder. You can also customize by adding your favorite veggies like diced bell peppers or spinach to the filling along with the chicken for added flavor and nutrients.
