- Toss the cubed chicken with olive oil, garlic powder, onion powder, black pepper, and salt in a medium bowl, ensuring it's evenly coated.
- Heat a large skillet over medium-high heat, add the seasoned chicken, and cook for 5-7 minutes until golden brown and cooked through.
- Reduce heat to medium, add minced fresh garlic to the skillet, and sauté for 1-2 minutes until fragrant but not browned.
- Turn off the heat, sprinkle both cheeses over the hot chicken and garlic, and stir gently until mostly melted and gooey; cover briefly if needed to fully melt.
- Warm tortillas in a dry skillet for 15-20 seconds per side, or microwave wrapped in a damp paper towel for 30-60 seconds until pliable.
- Lay out a warm tortilla and spoon a generous amount of the cheesy chicken and garlic filling into its center.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a secure wrap; repeat for remaining tortillas and garnish with parsley or cilantro if desired, then serve immediately.
