Preparation
- Preheat your oven to 375°F (190°C). Wash and slice each mini bell pepper in half lengthwise, removing seeds and membranes, then place cut-side up on a baking sheet.
Filling
- In a medium bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper, mixing until smooth and thoroughly incorporated.
Assembly
- Fill each pepper half generously with the cream cheese mixture using a small spoon or piping bag.
- Sprinkle each stuffed pepper with Everything Bagel Seasoning, gently pressing it to ensure it adheres.
Baking
- Bake in the preheated oven for 15-20 minutes until the peppers are tender-crisp and the cheese filling is warm and lightly bubbly.
Serving
- Remove from the oven and let cool for a few minutes before serving, as the filling will be hot.
Notes
For an extra kick, add a pinch of red pepper flakes to the cream cheese mixture. These also make great leftovers when reheated in a toaster oven or air fryer.
