Prepare the Apples
- Preheat the oven to 375°F (190°C). Wash the apples and carefully core each one, leaving about 1/2 inch at the bottom to form a cup.
- Combine melted butter, cinnamon, nutmeg, and brown sugar; brush this mixture over the apples and place them in a baking dish.
- Drizzle 1 tablespoon of caramel sauce into the bottom of each cored apple cavity.
Make the Cheesecake Filling and Topping
- Beat softened cream cheese with granulated sugar until smooth, then mix in egg yolk, vanilla extract, sour cream, and salt.
- Spoon the cheesecake filling into each apple, mounding it slightly at the top.
- Mix chopped pecans with 1 tablespoon of caramel sauce and sprinkle this mixture over the cheesecake filling in each apple.
Bake and Serve
- Pour 1/4 cup of water into the baking dish, then bake for 30-45 minutes until apples are tender and the filling is set and golden.
- Remove from oven, cool slightly on a wire rack, and drizzle with additional caramel sauce before serving.
Notes
Adjust baking time based on apple size and desired tenderness. For a richer caramel flavor, warm the extra caramel sauce slightly before drizzling. These are delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
