Ingredients
  

For the Apples
  • 4 large Granny Smith apples
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons brown sugar optional, for apple exterior
For the Cheesecake Filling
  • 8 oz cream cheese (1 block) softened
  • 1/4 cup granulated sugar
  • large egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons sour cream
  • salt pinch
For the Caramel Pecan Topping
  • 1/4 cup caramel sauce plus extra for drizzling
  • 1/2 cup chopped pecans

Method
 

Prepare the Apples
  1. Preheat the oven to 375°F (190°C). Wash the apples and carefully core each one, leaving about 1/2 inch at the bottom to form a cup.
  2. Combine melted butter, cinnamon, nutmeg, and brown sugar; brush this mixture over the apples and place them in a baking dish.
  3. Drizzle 1 tablespoon of caramel sauce into the bottom of each cored apple cavity.
Make the Cheesecake Filling and Topping
  1. Beat softened cream cheese with granulated sugar until smooth, then mix in egg yolk, vanilla extract, sour cream, and salt.
  2. Spoon the cheesecake filling into each apple, mounding it slightly at the top.
  3. Mix chopped pecans with 1 tablespoon of caramel sauce and sprinkle this mixture over the cheesecake filling in each apple.
Bake and Serve
  1. Pour 1/4 cup of water into the baking dish, then bake for 30-45 minutes until apples are tender and the filling is set and golden.
  2. Remove from oven, cool slightly on a wire rack, and drizzle with additional caramel sauce before serving.

Notes

Adjust baking time based on apple size and desired tenderness. For a richer caramel flavor, warm the extra caramel sauce slightly before drizzling. These are delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
