  • 1 packet taco seasoning or homemade blend: chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper
  • 1/4 cup water for seasoning meat
  • 4 large eggs
  • 4 slices crispy crumbled bacon optional
  • 1-2 avocados diced
  • 1/2 cup mild salsa

Cooking Steps
  1. Combine rice and water/broth in a saucepan, bring to a boil, then simmer covered for 15-18 minutes until tender; fluff with a fork.
  2. Brown chorizo/sausage in a skillet, drain grease, then stir in taco seasoning and 1/4 cup water; simmer for 5-7 minutes until sauce thickens.
  3. Cook eggs to your preferred style (fried or scrambled) while the sausage simmers.
  4. Dice avocado and prepare salsa; ensure bacon is cooked and crumbled if using.
  5. Assemble bowls with rice, seasoned sausage, egg, avocado, salsa, and bacon (if desired), then garnish with any extra toppings.

Notes
