Ingredients

  • 1 cup plain, full-fat Greek yogurt
  • 1/2 cup mixed berries fresh or thawed frozen, e.g., strawberries, blueberries, raspberries
  • 1 tablespoon honey or maple syrup adjust to taste
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granola

  • fresh mint leaves
  • lemon zest

Method
 

Preparation
  1. Wash fresh berries or thaw frozen ones and drain excess liquid. Slice larger berries if needed.
Mash Berries
  1. Gently mash half of the berries in a small bowl, leaving some whole for texture.
Prepare Yogurt Mixture
  1. Combine Greek yogurt, honey or maple syrup, and vanilla extract in a separate bowl; stir until smooth and adjust sweetness to your liking.
Assemble Parfait
  1. Spoon one-third of the sweetened Greek yogurt into the bottom of a serving glass.
  2. Top with a spoonful of mashed berries and a few whole berries.
  3. Sprinkle with half of the granola.
  4. Repeat the layers with another third of the yogurt, more berries, and the remaining granola.
Finish and Serve
  1. Finish with the last third of Greek yogurt and swirl any remaining mashed berries on top.
  2. Garnish with fresh mint or lemon zest if desired. Serve immediately or chill for 15-30 minutes.

Notes

For a thicker parfait, use extra-thick Greek yogurt. You can prepare this parfait ahead of time by keeping the granola separate and adding it just before serving to maintain its crunch. Experiment with different types of berries or add a sprinkle of cinnamon for variety.
