  • 2 cups prepared mashed potatoes cold leftovers ideal
  • 1 large egg
  • ½ cup shredded cheddar cheese or Gruyere, Monterey Jack, or a blend
  • ¼ cup all-purpose flour
  • 2 tablespoons finely chopped chives or green onions
  • ½ teaspoon garlic powder
  • Pinch cayenne pepper optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons olive oil or melted butter

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine the cold mashed potatoes, egg, shredded cheese, flour, chives or green onions, garlic powder, and cayenne pepper (if using).
  3. Season with salt and pepper to taste, then thoroughly mix all ingredients until well combined, avoiding overmixing.
  4. Using a small cookie scoop or two spoons, form golf-ball-sized potato mounds and place them on the prepared baking sheet, leaving space between each.
  5. Lightly brush the tops and sides of each potato puff with olive oil or melted butter.
  6. Bake for 20-25 minutes, or until the puffs are golden brown and crispy; you may flip them halfway through for even browning.
  7. Remove the cheesy mashed potato puffs from the oven and serve immediately.

Notes

For extra flavor, consider adding a pinch of smoked paprika to the mixture. If you don't have a cookie scoop, two spoons work just as well to form the puffs. These puffs are best served hot, directly from the oven, but leftovers can be reheated in a toaster oven for crispiness.
