  • 2 slices whole-grain bread
  • 1/2 ripe avocado
  • 2-3 oz smoked salmon
  • 1 hard-boiled egg sliced
  • 1 handful fresh spinach or arugula
  • Dash everything bagel seasoning
  • lemon wedge optional, for serving

Method
 

Instructions
  1. Toast the whole-grain bread to your desired crispness.
  2. While the toast is warm, mash the avocado directly onto each slice, spreading evenly.
  3. Gently lay the smoked salmon over the avocado on both slices of toast.
  4. Arrange the sliced hard-boiled egg on top of the salmon.
  5. Garnish with a handful of fresh spinach or arugula.
  6. Sprinkle generously with everything bagel seasoning.

Notes

For extra flavor, you can lightly toast the everything bagel seasoning in a dry pan before sprinkling on the toast.
