Ingredients
  

Main Ingredients
  • 2 tbsp whole cumin seeds
  • 2 tbsp whole coriander seeds
  • 1 tbsp whole black peppercorns
  • 1 tsp whole green cardamom pods
  • 1/2 tsp whole cloves
  • 1 small dried bay leaf
  • 1 cinnamon stick about 2 inches

  • Spice Grinder or Coffee Grinder

Method
 

Preparation
  1. Place all whole spices into a dry pan and toast over medium heat for 3-5 minutes, shaking the pan frequently until fragrant.
  2. Remove the spices from heat and allow them to cool completely.
  3. Once cooled, grind the toasted spices into a fine powder using a spice or coffee grinder.
  4. Store the blend in an airtight container in a cool, dark place for up to 3 months.

Notes

Be careful not to burn the spices while toasting, as this can make them bitter.
