Prepare Apple Filling
- In a medium bowl, combine diced apples, granulated sugar, cinnamon, nutmeg (if using), and lemon juice; toss to coat evenly.
Prepare Puff Pastry
- Thaw the puff pastry sheet according to package directions, then unfold on a lightly floured surface or parchment paper.
Assemble Turnovers
- Cut the pastry sheet into 4 equal squares. Spoon apple filling onto one half of each square, leaving a 1/2-inch border.
- Fold the other half of the pastry over the filling to form a triangle. Press and crimp the edges with a fork to seal securely.
Bake Turnovers
- Transfer turnovers to a parchment-lined baking sheet. Brush tops with egg wash and cut two small slits in each to vent.
- Preheat oven to 400°F (200°C). Bake for 18-22 minutes until golden brown and bubbly.
Cool and Serve
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Dust with powdered sugar just before serving warm.
Notes
For best results, use all-butter puff pastry. Adjust sugar in the apple filling based on the sweetness of your apples. Turnovers are best served warm.
