Ingredients
  

Meatloaf
  • 1.5 lbs Ground Beef 80/20 lean recommended
  • 1 packet Onion Soup Mix approx. 1 oz
  • large Egg
Mashed Potatoes
  • 1 cup Instant Mashed Potato Flakes
  • 1 cup Milk for mashed potatoes
  • 2 tablespoons Butter for mashed potatoes
  • Water as per instant potato package directions
  • Salt and Pepper to taste, for mashed potatoes

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or an 8x8 inch baking dish.
Cooking
  1. In a large bowl, combine ground beef, onion soup mix, and egg, mixing gently until just combined to avoid overmixing.
  2. Press the meat mixture evenly into the prepared pan or shape it into a free-form loaf.
  3. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
Finishing Touches
  1. About 15 minutes before the meatloaf is done, prepare instant mashed potatoes according to package directions, using water, milk, and butter, then season with salt and pepper.
  2. Once the meatloaf is cooked, remove it from the oven and let it rest for 5-10 minutes before slicing to redistribute juices.
  3. Slice the meatloaf and serve immediately with a generous dollop of warm mashed potatoes.

Notes

For an extra touch, you can add a simple glaze to the meatloaf during the last 15 minutes of baking, such as a mixture of ketchup, brown sugar, and a little mustard.
