Cooking
- In a large bowl, combine ground beef, onion soup mix, and egg, mixing gently until just combined to avoid overmixing.
- Press the meat mixture evenly into the prepared pan or shape it into a free-form loaf.
- Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
Finishing Touches
- About 15 minutes before the meatloaf is done, prepare instant mashed potatoes according to package directions, using water, milk, and butter, then season with salt and pepper.
- Once the meatloaf is cooked, remove it from the oven and let it rest for 5-10 minutes before slicing to redistribute juices.
- Slice the meatloaf and serve immediately with a generous dollop of warm mashed potatoes.
Notes
For an extra touch, you can add a simple glaze to the meatloaf during the last 15 minutes of baking, such as a mixture of ketchup, brown sugar, and a little mustard.
