Ingredients

Main Ingredients
  • 1 rotisserie chicken, shredded (or 3 cups cooked, shredded chicken breast)
  • 6 cups low-sodium chicken broth
  • 1 refrigerated flaky biscuit dough (16.3-ounce) can (e.g., Pillsbury Grands! Flaky Layers)

Equipment

  • Large pot or Dutch oven

Method

Preparation
  1. If using raw chicken, cook until tender, then shred or dice and set aside.
Cooking
  1. Pour chicken broth into a large pot and bring to a gentle simmer.
  2. Flatten and quarter each biscuit from the can.
  3. Drop biscuit pieces into the simmering broth, ensuring they are submerged.
  4. Cover and simmer for 10-15 minutes until dumplings are puffed and cooked through.
  5. Stir in the shredded chicken and heat for a few minutes.
  6. Taste and adjust seasoning with salt and pepper.
  7. Ladle into bowls and serve immediately.

Notes

For extra flavor, you can add some dried herbs like thyme or poultry seasoning to the broth. For a thicker consistency, remove a cup of broth, mix with a tablespoon of cornstarch, and stir back into the pot before adding chicken.
